2016: Life is about trying again

First let's talk a tiny bit about 2015

Things I wished I did:
  • went camping
  • wrote in this blog more
  • memorized the different types of hand grips for handwriting
  • explored more national parks!
Things I'm glad I did:
  • explored 4 national parks and a bird refuge
  • cooked and baked a lot
  • aced my classes
  • played Human Hungry Hippos
  • hosted lots of parties
  • tried to learn to play the mandolin
  • spent time with my loved ones and friends
  • made new friends
  • made it half through my OT graduate program

The point of these lists is to say I'm pretty pleased with what 2015 had in store for me. For 2016 though, I have more plans and I hope to have nothing on my "Things I wished I did" list. The first being write in this blog more. I always have so many ideas of what to write about, but I am afraid it won't flow or it will seem random, and maybe it would have been, but at the end of the year I posted a minuscule portion of my ideas. 

So this is me bringing it back with another challenge I've chosen to do: The gatheredtable #homemade14 challenge, where for a straight two weeks I make my meals and snacks at home and avoid eating out/take out. 

Today is day 1 and I would like to feature my Crockpot Lasagna. I roughly follow this recipe from realsimple.com which I found through pinterest. I love this recipe because it's easy and delicious! 

Basically gather your ingredients make your cheese 
spinach filling, layer everything in the crockpot and 
walk a way.
However, I do have a few substitutions. Instead of ricotta cheese I use cottage cheese. And instead of frozen spinach I use fresh spinach chopped up in a food processor.


After 3.5 hours on low the lasagna is ready to eat. 

Dinner tonight! Crockpot lasagna with some spinach salad.
